BETTY'S BUTTER CAKE

Betty's Butter Cake

Ingredients:

1 box yellow cake mix
1 stick Land O Lakes butter, melted
1 egg

Mix as for pie dough.  Pat into greased 13 x 9 x 2 inch pan.

1 (8 oz.) pkg. cream cheese
2 eggs
3/4  (approx. 2 3/4) c. powdered sugar

Beat 3 minutes; pour over cake dough.  Bake at 350 degrees for 40 minutes.   Sprinkle with powdered sugar  while still warm.  Cut into squares or bars.



GRANDMA'S PEACH CREAM PIE

Grandma's Peach Cream Pie

Ingredients:

1 c. milk  
2/3 c. sugar
1 Tbsp. cornstarch
3 egg yolks
1 c. mashed peaches, fresh or canned
1 Tbsp. lemon juice
1 pie shell

Directions:

Scald milk and sugar.  Mix with cornstarch (add small amount of milk mixture to cornstarch first, then pour into the remainder of milk mixture) and cook until thickened.  Add egg yolks (use same method as above)  and cook 5 more minutes.  Stir in mashed peaches and add lemon juice.  Pour into cooked shell and refrigerate several hours.
